Impossible Tomato Broccoli Cheese "Pie" (actually a casserole)

Well, I finally did something different with the self-rising (aka self-raising) flour I've had on hand. My daughter had brought home a bag full of tomatoes that I didn't want to lose, I had some cheese on hand, loads of eggs and some broccoli in the freezer. I had recently learned that I could use the flour in place of Bisquick baking mix to make "impossible" pie/casseroles, so I decided to see how it would go.
I don't like tomatoes, myself. I LOVE things that are made from tomatoes, but the actual tomatoes I just don't like. Still, I wanted to use these tomatoes before we lost them and the photos of this pie looked so delicious I decided to try it.
Well, it was a success!! The only thing I would do differently the next time is to dice the tomatoes so that more of their juice will drain off and so the pieces are easier to eat. These tomatoes were pretty tough and didn't fall apart like I expected them to after they were cooked. But, all in all, the entire thing was a great success. Even my daughter, who'd said the day before she thought the idea sounded gross, tried it and liked it. The tomatoes still tasted like tomatoes, but as long as I also got dough and cheese in the bite, it wasn't so bad. I'd make it again.
Have you ever made one of these "impossible" pies? Did you know that you can use self-rising flour instead of Bisquick? This should be helpful to those living in countries where Bisquick isn't sold.
What kind of impossibles do you like? There are desserts, side dishes and main courses. I think I'd like to try more of them.

I like tomatoes! And I have never had tomatoes in this pie thing or casserole like that. I might try it. I am not really that good of a cook, yet, nor am I big on baking. I can go as far as making biscuits and brownies but that's just about it. So for me, anything outside these is already "impossible" for me.

Hi Raine. Here's a website of recipes for "impossible" ideas. It might give you some ideas of your own. If you don't have anything like Bisquick (biscuit mix or even pancake mix), then use self-raising flour for these recipes instead. Good luck. I'm not the best cook, but these are easy - which is why I think I'm going to do them more often.

We've done the Impossible Apple one, we even made it once with pears and another time with mixed apple and berries.
Personally, I only eat tomatoes two ways, raw and cooked - in other words, I love them, but I haven't tried making impossible main courses - yet. Maybe I will now.

I have made them before,and I love the ease of them. I think maybe I have made the impossible pizza pie, and a dessert at my house. At work they were standards in the company meal books. I was not aware you could use the self rising flour, because Bisquick and most "pancake mixes" (which I have subbed in} also have some oil in them. I have some self rising flour and I may make some kind of casserole for supper tonight. The broccoli and tomatoes sounds good, and I would also eat tomatoes with onions and garlic and chicken, as you mentioned on another site. I have made "chicken pot pie" this way.

I have made foods like this many times and it is a good way to rid your self of food that you would not eats by normal means
