how to cook calamari?

Cooking squid sometimes very difficult. Especially for fried calamari. How to cook fried squid or calamari so tender and easy to bite?

when i worked on a resort we used to cook calamari. what we do is we clean the squid and slice . after that we soak the squid on sprite for a while to tenderize the squid and it also give some kick to the flavor. next we use flour , with salt and pepper or whatever seasoning we want to add. we beat an egg and dip the squid on it before rolling to the flour mixture and deep fry it.
