Billy's Boudin & Cracklin

I am so happy every time my boss has to go to a meeting in Lafayette, Louisiana because he always brings us back Boudin & Cracklin's from Billy's Boudin & Cracklin in Scott, LA. This is really not a great pic, it is just my own pic. You can check out more of what they have by looking up their website. It is so delicious! Today, the boudin was crawfish boudin. You can also get other types of boudin, smoked sausage, pepperjack boudin balls, crawfish tails and even alligator meat. If you are unfamiliar, this is Cajun/Creole cuisine and common in the southern U.S., most of all in Louisiana. "C'est si bon" ! (It is SO good! that is French. Many people in southern Louisiana also speak French.)

I have served at my restaurant in 2001. It came with chitterlings and collard greens.

@jahunt Jambalaya and Portuguese stew was a big hit. Rack of lamb and lamb shanks, Of course, plenty of Italian pasta dishes too.

Oh I would weight a ton if I were there. I would be having battered everything lolz I truly wish to go one day to Louisiana. The food is perfect for me seafood and spice.

I've only heard of Cajun foods but never did get to try any. It seems to be unique to the area.

I would like to, but I haven't heard of creole being served anywhere around here @jahunt but you are correct, we have some of the best Mexican restaurants in TX.

Hi @rebelann! If you get the chance, you should try it. It originated in this area but many places all over the country serve it. I bet you get some great authentic Mexican food there! I love this as well!
