The best chicken salad, ever.

I swear the recipe for chicken salad I learned from a coworker is one of the best I have ever had. It’s better than grams even. It calls for chicken, mayo (Hellmans, I have tried other brands, if you don’t use this one, to me it doesn’t taste right. If you can’t get this brand, then play with this part until you find one you like best), honey mustard, sweet relish. Optional ingredients include eggs, vinegar, onions, grated cheese, and things of those nature. Why she even added celery once, and grapes another time!
I don’t eat mine with bread, I eat mine with romaine lettuce leaves, like tasty boats of chicken salad, to keep down the carbs I am getting. I’d rather have something else later than bread for this.
Oh! And I make up like 4-6 breasts at a time, and thus can eat on this for most of the work week!

@Marilynda1225 I tried the salad in a restaurant and I liked the taste, since than I add the apples and some raisins.

oh I could see apples being good in there, might add some next time to a single serving and see if I like. Not a fan of raisins, can eat them, but don't like. and hate celery

I had to look that up, never poached chicken, then saw a recipee on the side bar, and 15 min later coming back with an idea for low carb marinara and low carb chicken Parmesan!

I have to agree about the Hellmans mayo...that's all I buy and can taste the difference if I use a different brand. My daughter makes a great chicken salad and I'm not totally sure of the recipe but she adds walnuts to her...oh so yummy! I like you idea of using romaine leaves instead of bread

sometimes I chop them up to make a chicken salad ah salad, lol. Other times I load up the leaves and make boats!

We love chicken salad and I make it with celery and grapes or dried cranberries too. I add curry to the mix as well, but no cheese.

Excellent lunch strategy. I would probably include the eggs and onions. Pecans or cashews are nice as well.

I often take the eggs with me and add those last minute, so the main batch keeps longer.

Being a purists chicken salad is just chicken and mayo on two slices of white bread...but I can't eat mayo so I can't eat it your way or my way.
