What's for Dinner?

Tonight, I made something that my mother would make occasionally. Once I learned how to make it, my husband used to beg for it all the time. I enjoy it so much and it always feels strange these days not to have my mother or my husband here to share it with me. Mom always called it a spinach pie. She also made one with sausage. Basically, what you do is take dough and let it rise, then stretch it out on a cookie sheet. You can put anything on the dough that you wish. It's as if you're making a pizza. Tonight I sauteed onions and then cooked up a bag of baby spinach in with the onions. I let that cool and then spread it over the dough. I added some olives and then sprinkled shredded cheese over the whole thing. At that point, I could have baked it just like that and made a pizza, but I didn't. I could have cut it up and folded it over to make calzones, but I didn't. lol I rolled the whole thing up like a jelly roll. I added some olive oil to the outside of the dough and baked it at 350. I checked it after 30 minutes and it was done! So I took it out of the oven and let it cool before slicing it up. It came out perfect. I just had some iced tea with it and remembered the good times having it with my loved ones. I have more dough so I'll make another one tomorrow. This time I'll add some pepperoni to give it more of a kick. :) What are you having? -Claudia- image from Pixabay

That sounds very good. I had regular frozen pizza last night for supper. I'm not certain what it will be tonight.

the one I made tonight was even better than last night. I think I might have to buy some dough every week and make something different. It's easy and so much fun! :)

I made something similar, but I have used soft cheese to spread on the dough, sliced asparagus and herbs, then I have rolled the dough and baked.

That sounds wonderful, too! I'm going to buy some dough every week and make something different. There are so many vegetables that I would never run out of ideas. :)

I knew I would be gone all day, so I put a box of shiitake mushrooms, a whole bag of mirapoix blend veggies, a half a bag of frozen meat balls in the crock pot. Over it I poured on can tomato soup, one can mushroom soup and about four ounces of condensed milk cause I needed to use it up. I ate mine plain, hubby made a "sub" sandwich of his. I had tomato juice to drink.

that sounds wonderful! I sold my crock pot before I moved. It was way too large for only me. And I"m not sure I'll really need one going forward unless I can't get an air conditioner, in which case a crock pot would definitely save me from the heat up here! lol

oh I love mac 'n cheese! I was just so used to doing all the cooking for so many years that it's in my blood. Seems a waste for only me, but I have to eat, too! lol

Yes, that's what I plan to do. It's so easy and so much fun that I'm going to plan something different for every week so I'll have at least a couple of really good meals. And then I can play around with other things. :)

The one with pepperoni tonight was great. Tomorrow I get out the chicken and see what I can create with that! :)
