Frittata in the Vineyard

We have friends who own a vineyard in Donnybrook, Western Australia. The husband mostly works away, flying to Eastern European countries working as an engineer on oil fields. They have recently built a 'cellar door' and now, from Thursday to Sunday, offer light lunches, cakes and coffees along with wine-tasting and sales. Vince has his photo exhibition at this place. The wife happened to mention when talking in a group that it is all a bit more time-consuming than she had bargained on. She also said she'd love to go out for lunch occasionally but there was always something that needed doing.
So we arranged to take lunch to her. Yesterday we made a frittata, sliced and arranged it in a bed of salad and took it to the vineyard. We sat outside at one of the tables and watched the sky go from mostly blue to mostly black and back to blue again. But it didn't rain on us. A Japanese horticultural student was there tip-pruning the vines and the four of us had a enjoyable lunch. Within the hour, we had gone leaving them to get on with their pruning. Guess what leftovers we're having for lunch today.

@sofssu Vince never follows a recipe for one and just uses whatever vegies he has so every one turns out a little bit differently. And it takes a long time for the egg in the centre of the dish to set. Sometimes it turns out a bit watery if you don't let it cook long enough.

Not knowing what a Frittata is, reading the title I thought perhaps it has something to do with grapes.
So you got together for lunch at a vineyard and shared your Frittata. What is a Frittata?

It looks delicious...and I'm sure your friends appreciated the food and the conversations. i have friends who run a huge winery. Years ago when we were new to Canada it was small and growing. Now it is fabulous, and has a staff that is amazing. It was fun when small, its smart and upscale now but the owners are still the same only not as busy because of the staff now.

Yes, we ate it all. The leftovers were just the edges that we cut off before we left.

I should have taken off the plastic. The frittata is a collection of vegies, roasted and otherwise) placed in a casserole and beaten egg poured over it. Then you bake it till the eggs set.
