Will honey into crytals...? Can it be used safely?.

I have read an article which says it is a wrong notion that honey will never spoil and a good honey will remain as it is for 100 years. I really wondered to read this. Is is really true ? Then how the honey I bought pure from the forest villagers and extracted right in front of my eyes turned into crystals after 6-8 months? It embarrassed me . The Crystalization Honey does not mean it is spoiled. We can give it and bring it into it's previous form.This can be used safely. Take a pan having deep bottom with very hot water. keep the honey bottle in it. It slowly turns into liquid and gets a poutable state.Now, you can keep it in the same container or transfer it into another container. The only change that takes placeis it does not have it's golden color and lose some of it's nutritional value in small quantities.But, it can be used safely.

My roommates grandparents have their own hive and she brings raw honey to college with her and it turns into crystals after it sits for awhile and doesn't get used. I am more worried about eating something can sit in the shelf for years and never change or still be good. For it to be able to stay good for that long means there are chemicals in it that can't be good for us at all.
