Eggplant Parmesan

I hopped over to Pixabay to take a look at the newest Editors Choice photos and found this beautiful photo of eggplant. It instantly gave me a wonderful idea for dinner tomorrow night.
I will now be fixing Eggplant Parmesan for dinner. I love this dish. It is one of my absolute favorites.
We will be having that, garlic bread, and a big old glass of sweet tea.
Of course I will be making two pans of it, one for tomorrow and one for the freezer.

I'm not a fan of eggplant but with some parmesan I think that'd taste better! And garlic bread, yum!
How do you prepare the eggplant Parmesan? Like fry, bake?

@infatuatedbby I bread and fry the slices of eggplant. Then layer them with marina sauce and shredded mozzarella cheese. Stick it in the oven and bake for about 45 minutes on 325.

I have never had eggplant before. I am not even sure how to cook it. I have heard of people making Eggplant Parmesan but I have never attempted it.
