French Toast Pancakes

I can see all of you out there going, “Huh? What is French toast pancakes? Do you make pancakes and then dip them in French toast mix?” I suppose you could try that. But that’s not what I do. Too much work. Too much frying.
Anyone who has read my posts in the past knows I’m not afraid to experiment in the kitchen. French toast pancakes came out of one of these experiments. And it’s very simple to make.
I do not mix it up from scratch, so to speak. In a way, I make it from leftover mix.
A couple of days ago I decided I wanted French toast. This is how my French toast pancakes start. I mixed up the milk and eggs adding a touch of salt, nutmeg, cinnamon and vanilla. Then I dip bread into it and cook up my French toast. I mixed up too much of this French toast mix, which I accidentally do quite often. The leftover mix went into the refrigerator. I don’t like throwing food away.
I usually end up making too much French toast mix. So a day or two later I’ll pull the mix out and put it in the pancake flour instead of the water or milk and eggs that the mix calls for. (If the mix calls for water it does not hurt to put this in instead of water.) If the pancake batter is too thick, I add water or milk. If the batter is too thin, I add more pancake flour. Then I cook the pancakes up the same as any pancakes. That’s how I make my French toast pancakes.
Of course, you can always use your leftover French toast mix to make more French toast, but what fun is that? I usually don’t have enough leftover French toast mix to make more than one or two pieces of French toast. This is a good way to use it up without having to mix up more French toast mix. And it gives me something a bit different to eat.

You're also quite frugal! You get quite fancy with your French toast . . . I will only do egg and cinnamon. With just that, one piece of bread will sop that up, so I never have leftovers. I take that back . . . sometimes I will have a teeny bit of leftover (especially if the bread is small) . . . so then I will pour it over the bread after I put it in the pan. I experiment more these days only because I am usually pressed for time (whatever it turns out to be, we gotta eat it . . . it is what it is

One piece of French toast wouldn't cut it for me. Egg and cinnamon–ok. I've heard just egg without milk taste quite good. I've never tried that. When I say I add a touch of this or that it's because I never measure it. When I have just a teeny bit left (not enough for even on slice) I'll pour that over the bread. But that rarely happens.

@RichardMeister I remember you said you only ate 2 meals, so I imagine each meal would have to be filling in order for you to get through your day - yah, I can see how one piece of French toast wouldn't cut it for you. I'll have to try the nutmeg and vanilla - hey add some pumpkin and ginger for autumn and you can have pumpkin pie French toast (how's that for experimenting). The kids call our French toast "egg bread". I remember when I went to a friend's house, her mom made French toast with pancake batter she poured out of a carton. I always thought I had never seen premixed liquid pancake batter at the store . . . but thinking back maybe she made it and just stored it in that carton.

@much2say Now you're thinking "experimenting"! I was thinking the carton stuff must have been something she mixed up before hand and stored it in the carton.

Now that sounds interesting. I'll give it a try. Yes, i love to experiment and I always think of things I can throw together to make new and interesting dishes. You gave me the incentive perhaps I'll even try French toast waffles. I have a waffle maker.

French toast waffles sounds good. I no longer have a waffle iron (my last one broke and I never got around to buying a new one).

I was just looking at a recipe for a pumpkin French toast casserole for the holidays. I do like to experiment in the kitchen and have come up with some pretty tasty concoctions. It's good that you are able to use leftovers and not waste food.
