Cumin may not be a very common seasoning. The western Chinese food often uses it as the seasoning, especially when they bake the mutton. I really love it. It really matches the mutton.

Cumin is a great seasoning to use. We do not use it that much, but it is good.

@youless yeah we have it here many people use when cooking too. But I dont. I use only when making traditional sweets like oil cakes... Otherwise I use it as a remedy for loose motion

@magallon That is very interesting since it is not our main seasoning. And we also don't eat mutton so often.

I have some in my cupboard, but I don't think I've used it very often.

Perhaps you don't often bake the meats.

@youless No, I don't tend to, although I may have got the cumin for cooking Chinese recipes. Mostly Szechuan I think I cook.

I am not a big fan. It is mainly used in a few cheeses here, but it is present in all dishes in North Africa with other spices : couscous, tagines, etc. For mutton, I prepare it with thyme, oregano, and other herbs from the South. I will add a bit of cumin next time.

I like fried lamb with cumin very much. The cumin looks like the fennel fruit-both Chinese herbal medicine and spice.
