Gelatin is still made from the bones of animals. I suppose that, as long as there are meat eaters, there will always be a ready supply. There are other gelling agents such as agar, which are vegetarian. Marshmallows used to be made by boiling the roots of the marsh mallow plant but I don't know of any that are made that way today.

Marshmallows were originally made from a gel extracted from the root of the marshmallow plant. It's an ancient Middle Eastern confection and the extract from the roots was used as a medicine. Nowadays animal gelatin is used instead of the plant extract, presumably because it's cheaper and easier. Gelatin used in food is quite clean (at least, in Europe and the USA) but, of course, it's not suitable for vegetarians. There are other gelling agents which could be used, for example, agar (from seaweed), but animal gelatin is abundant and cheap, so that is what is used.

@averygirl72 Anything called gelatin comes from animals. The gelling agents which are made from plants (usually seaweed) are called by various names - agar-agar and carragheen moss, for example.

All I know before is that gelatin comes from plants or seaweeds. I didn't know that animals are also source of gelatin by boiling their bones, skin, and ligaments
