Pork Sinigang for Dinner

Sinigang is the most popular sour soup in Filipino cuisine. It's our own version of Thailand's tom yum, and it's a versatile kind of dish that can use meat, poultry or seafood.
Tonight we're having pork sinigang for dinner. My kids love it, especially when it's loaded with water spinach, string beans, and eggplant. I would've added taro for a thicker consistency, but it wasn't available at the supermarket.

Yes, I've tried that too! I once added squash to sinigang na manok and it was really good! Nutritious too.

@almostoveryou Yeah right.. I think squash is more nutritious than eggplant and taro...

@magallon @almostoveryou we add squash to kare-kare. we use pechay in tinola (chicken in ginger broth) instead of talbos ng sili (chili leaves). i bought shrimp this weekend, so i might experiment with the veggies there, too. we've also substituted chicken for pork recently in sinigang. we add taro (gabi) in dinuguan (pork blood stew)

Wow! I love the fat portion of pork in sinigang. I ate it with Paris and green chili. Yummy. My mom is a great cook of sinigang. God bless.

Yes, the fat makes a huge difference! I make sure to have all fat, meat, and bones for the best-tasting broth.
