Pork Butt Roast prep

A while back, I bought a large pork shoulder roast - also called a butt roast. It was chilling in the fridge until I finally cut it down today. I had never bought one before. Not sure I will again, but I don't yet know. I got several slices that I will use like pork chops, a good pound or so of pork cubes, a small chunk I can roast or shred or cube in the future and a very large piece for roasting. All out of one rump. I also got fatty bits that I didn't want on the other cuts that I quick cooked for my daughter's dog Tucker (who went to town eating them!) I think I'll make another batch of goulash with some of it - or I might make pork curry with the curry sauce I made today. I'll have to think on it.

It was DELICIOUS!!! I made pork curry. I found a recipe that I could work with other than I had no coconut milk. So, I took a chance and used sour cream (dairy free) instead. It was perfect!! And, oh so delicious. I still have most of the pork left, so I'm looking forward to trying another recipe later.
