Tonight's dinner is anything leftover from yesterday's Easter dinner. There is plenty to choose from even after sending some of it home with our fellow foodies. We had an abundance of food so it stands to reason that we would have a good amount of leftovers. Yeah! I don't have to cook for the next couple of days. So, tonight on the menu will be: ham, scalloped potatoes, macaroni and cheese, carrots, green beans, deviled eggs, and some fresh cut fruit and vegetables. So, how was your Easter?

@louievill true, with what we spend on food it's nice to know we can get true value.

We had a very quiet Easter and I did not make plenty of food, this year no leftovers at all.

Most of the time we end up with a mound of leftovers. Every now and then we have a quiet holiday when we eat light.

Leftovers brings out the creativity in us to those who know how to cook, same with Christmas and New Year leftovers

That's true. Last night we finished all but a little bit of ham for dinner.

Leftovers are a good thing to have for the next day when we don't feel like cooking.

My Easter was great! Two movies, roast leg of lamb, my sons, my oldest friend and her son, and a puzzle, and to finish off the night, I finished my book. Great day! I'll be eating leg of lamb for a few days as well. I finished off the potatoes and asparagus this morning for breakfast. Had a slice of lamb for lunch and thinking about making the dessert I couldn't get to yesterday. We'll see.

@HazySue Thank you. Yes it was. Now I'm letting it rest, but I will be back at it soon.

It was a little much but people wante3d to bring something. We just ended up making a buffet. The next day nobody had to coo because they all brought home enough to have leftovers for dinner

Can I come over? I bought a rotisserie chicken at the grocery store this morning...no muss, no fuss.

Come on down. I love rotisserie chicken. I usually buy it at Publix grocery store with a Mojo marinade. Enjoy your chicken.

We'll be having leftovers tonight too. Similar to you we're having ham, mac & cheese and whatever else we can scrounge up

Even though it's just the 4 of us, I made a big dinner too. We're doing leftovers tonight and probably tomorrow too. We have turkey, mashed potatoes, green bean casserole, and bread. Our Easter was pretty good, but since my 2 year old feels better today, he'll probably enjoy dinner tonight more than he did yesterday.

Your dinner sounds lie it was good. Half the fun of a holiday dinner is eating the leftovers the next day.
