Tonight, we had stir fry long beans with slices of carrots for dinner. Long beans are also known as green beans or snake beans in Western countries. I prefer to parboil the beans before stir fry so that I could shorten the cooking time since it takes a longer time for the beans to soften and shrink. As for the seasoning, I use oyster sauce and Japanese soy sauce with brown sugar. Taste super delicious! How do you cook long beans? This photo belonged to me, peachpurple

It looks like you've cut yours up. I've seen long beans in our local farmer's market and they are LONG, like over a foot long. I've heard them called noodle beans too.

We call them "green beans" in Europe and most of the time we boil them and then serve seasoned with olive oil or we sautee them with butter.
