Taste Explosion

I make an egg bake at least once a month and each time I've made it different. With my recent health trend to lose weight, I have an assortment of fresh veggies in the fridge.
My egg bake this morning consisted of fresh spinach, bella mushrooms, onions, and cherry tomatoes, along with shredded cheese. Other than the cheese, I put all ingredients with 4 eggs into the Ninja and into the 8X8 pan and into the oven for 20 minutes. I also added my favorite spice - Mrs. Dash garlic and herb.
Yes, my taste buds were in heaven. The only thing I didn't put into it that I usually do is shredded potatoes.
Now I just need to figure out the calorie count on all that. I do have a plan for a large salad later today and a fruit salad as well.
For right now, the notifications are done and I need to get to my daughter's to do laundry. I'll be back later to check in with you all.

That sounds delicious, I had a bowl of cereal with fresh blueberries and a bowl of cantaloupe. We have exercise this afternoon and need some strength.

@just4him I bought local peaches, blueberries, cantaloupe and half a watermelon, this way I will get plenty of fresh fruit,

@BelleStarr I've finished off the blueberries, I still have a couple peaches, and grapefruit yet. I do need to go to the store soon though. I'm almost out of the apple cider vinegar drink.

@just4him ......It's all in the technique. I couldn't either for a long time. You put the ingredients on the one side and it is easier to flip.

@celticeagle That's the way I do it, but it doesn't always work out, only when I have one or two ingredients.

@DianneN I don't know how I missed your comment on this post two years ago. From the date, it was one month before I started my diet plan as I was still eating cheese. It was delicious, and I've made many different varieties since. It's been a couple of weeks since I had an egg bake. Sounds like it's time for one.

I have been reading and doing myLot, in between laundry, dishes and taking the dog out. Nothing too exciting today, your breakfast sounds yummy though.

Let's see: I have done some yard work, and I have laundry going. I have had a scramble very similar to your egg bake. I am very sweaty and I plan to have my second cup of coffee and then lots of cold flavored water and a shower. I need to make some phone calls and in general push furniture around inside and out.

My roomie makes a turkey meatloaf with cream cheese and jalapenos. I think I am going to try that. It sounds awesome and probably tastes like a jalapeno popper.

That sound so good. I could eat that now. When you put in the shredded potatoes, do you shred them yourself or do you by them already shredded?
