Broken Pancakes

This has been a morning of broken pancakes.
Generally, I'm a pretty good pancake flipper, if I do say so myself. If there was a Pancake Flippin' Contest I'd have a good chance of winning that coveted Golden Frying Pan...
However, it all goes to pot when my only cooking source is a propane stove. Even worse when it's an RV propane stove!
No matter how I flicked my wrist or what fancy moves I attempted to incorporate, those blue blazing burners conquered each pancake!
I had a similar problem last Friday, only this incident involved a glass pan of brownies...
I lit the pilot and watched as the flame burst into life...only to have it die when I adjusted the temperature to 325.
It wasn't until my third try that I realized that, although the stove SAYS it can go down to 300 degrees, it will really only go as low as 350.
So...my brownies started to burn. I panicked, took them out of the oven, and set the hot glass on a wet towel...whereupon the glass immediately cracked into a bajillion pieces.
That rookie mistake lost me a good pan and had the kids asking me for brownies for the rest of the day.
So for those of you that have more experience cooking with propane, I would love to hear any tips or hints on how NOT to destroy my food in the future.
Or, you can boost my spirits by sharing your own embarrassing rookie kitchen mistake.

I used to have an awful time with chocolate chip cookies. I could make any other kind of cookie but that particular kind kept turning into hard rocks. My step-mom eventually watched me while I made it and was able to tell me what I was doing wrong. Apparently I was doubling everything except the butter!
I'm hoping with practice I'll be able to get the hang of using a propane stove. Just like with practice I got better with the chocolate chip cookies.

@Genipher My father taught me that pancake can only be flipped at the other side after I saw the bubbles appeared from the top
Now I`m trying crepes

I tried crepes once.
And only once.
