The college canteen does not do lunches normally. It is a small set up(every year there is talk of expansion).Oh well, now it has moved out of an unused wood shed…. The peak hours are devoted to making all types of oily junk food that the students thrive on. Chow mien smothered in ludicrous coloured sauces, samosas , egg chop(potato covered boiled egg and deep fried), ghugni ( a type of pea curry) ,sweets and deep fried savouries. Towards the late afternoon, the teachers make their way there. The menu goes through a drastic change. Cups of unsweetened tea and dry rotis with the vegetable of the day. The veggie dish can be anything and in any mix.Though usually it is tasty , sometimes the combination sounds too unbelievable and then we just say,”Make us an omlette instead”. But there are days when lunch has to be made. Like college election days, practical examination days , workshops, seminars and so on. These are whole day affairs and there is a lunch break. The canteen boy, sets up his temporary kitchen outside. Firewood is a plenty .Lots of waste wood from constructions going on and tree branches which the electricity people come and lop off when they go near the wires. The big vessels are dragged out from storage. A temporary helper hired. And , a tasty lunch for all. I particularly like the wood fire taste which can’t be got on a gas burner. photo: Mine during a lunch at college

The food is just so tasty prepared like this. But we hardly see that now a days in house's. Canteen ..hmm yes a lot of such unusual combinations we used to see in our college too... that's a good memory

Food cooked on wood fire is more delicious than food cooked on a gas stove or on some other medium.

Interesting menu choices. I have not had lunch at college in ages. We normally went out for lunch or packed our own from home.

During our college days, we don't take our lunches at the canteen. Usually, snack only because our classes starts in the afternoon. Though the canteens prepare an array of dishes where students can choose from of what they will eat.

It's like a camping-type cooking being outdoor with the wood fire and all... Looks like it's just the cooking oil and a curry leaf in the wok - were they just about to cook something there?

@responsiveme Oh, I see... maybe it's a way to 'test' when the oil/wok is hot enough or ready for use and to start cooking, no?

Yes, he had just put the wok on and was waiting for the oil to heat up.A bay leaf..The cook let it simmer for a while before he put the veggies there.

I also like the wood fire taste, it does not go with all the food, but many food are so much better cooked on a wooden fire. I have a wood fire oven to make pizza and I like grilled meat on a wood fire.

I love a fire for my food but the only time we get that is while camping, it does taste so delicious when cooked over a fire.

@responsiveme Just two weeks in the summer with my sister and our children, a tradition that we love. My husband and son also cook outside where we live. We have a smoker and a BBQ...

@responsiveme Ah yes. I have discovered the 2 types of curry - 1 I love and 1 I really cant' stand. There's dishes like Schwarma, Josh, Curry,... but some of those you listed are new to me

Wow! A canteen that has food on some days. That's new. And is forced to cook on special days? Is this a lifestyle? You seem to take this with serious calm acceptance. The fireside brought memories of early days cooking in our homes, but why a temporary makeshift fireside? I thought one will be set up permanently even if unused?

The canteen is always open ,wat I wrote was lunch as in rice, dal,Sanjiv, etc was on special occasions and then the outside fire.We love the taste

It's your version of a barbecue which sounds really interesting to me @responsiveme the good thing about cooking over an open fire outdoors is that there are no odors created indoors.

I suppose that looks very basic . In fact someone commented .. Ugh. But they are welcome to their views. Interestingly the last week there was a program at work and much bigger woks where used as the canteen boy cooked outside. Hope you are doing fine.
