Tonight's Dinner - Crock Pot Beef Stew

For the first time since I can't remember when, we are not having leftover turkey for dinner today, the day after Thanksgiving.
Every year we end up with a fridge full of leftovers. This year the leftovers are someone else's problem.
So, tonight we are free to have whatever we want. Yeah!
Since I am still on a soft diet I decided to fix crock pot beef stew. It's good, it's hearty, and it is easy to fix. Of course I am seasoning it so I can eat it and stay on my diet.

It was another full Thanksgiving dinner - with my boys. So it was turkey for me, and now I have the leftovers for a few days. Next time I make beef stew it will be in the crock pot. I made it on the stove last week and forgot about it and it burned to the bottom, but was not a complete loss.

We had leftover turkey last night. Made hot turkey sandwiches. It didn't go over well with Little Miss, but hubby ate it. He didn't go back for seconds though.
Before I head out to go to a church bazaar, I am tossing a pot roast into the crockpot. The place will smell so good when I get back this afternoon. The family enjoys a good pot roast dinner too.
