What did you have for dinner this evening?

This post is in response to @Maluse's lament that I have not written enough dinner posts. My breakfast posts are legendary, and I've started learning how to write lunch posts, but she is right: rarely have I done dinner posts. When dinner time came around this evening, I realized I didn't have a real plan. Searching through my refrigerator, I found that I had some open cans of hearts of palm, mandarin orange, and corn. So I made a "salad" of what was left, smothering everything in blue cheese dressing. Following this, I cooked up some Trader Joe's kun pao chicken, but added substantial amounts of yellow onion, fresh garlic cloves, Filipino rice, a touch of soy sauce, and a touch of Worcestershire Sauce. The result was delicious. So now I am full and happy and ready to do some work on the KLH 17 screens I've been working on. Tomorrow I have a music party to go to. Tonight, I relax. Maluse, I hope this post was satisfying to you.

Well, of course she will be! Let’s hope so! And your dinner seems yummy! But I found your dinner a little bit odd! Why would you mix chicken in all those veggie! I am not satisfied!

The veggies were really mostly onions and peanuts. The salad was my "appetizer."

Filipino rice... didn't know such a variety existed until your post. I have to look it up online now! I had overnight oats soaked in chocolate milk with chocolate covered raisins and chocolate dipped mangoes.

Yellow and white food. Kind of pretty. I had a weird dinner cause we had Thai food at a restaurant for lunch so tonight we did not need much. So: supper was leftover potato salad- avocado in there and sunflower seeds- shredded cheese over it and sauerkraut. Earlier it was home fruitcake and home peanut butter.

@TheHorse Just fried egg rolls to start then fried rice with pineapple and tofu. I wish there had been more noticeable egg in the rice. It had under cooked broccoli and tomato and carrots in it, too. I'm not convinced that this small town Thai place has the same food as bigger places like Seattle. My other gripe is that the place does not have brown rice.

What kind of soup did you use? I'm not a big tomato soup person, but if it was cream of mushroom, I think I could be happy with that.
