steamed cream dory (pangasius)

instead of breading, then frying, the frozen cream dory (pangasius fish fillet), i figured it would take less work and cook faster if i steamed it. i'll just "guess" at how to season it. here's how i did it: mix salt, pepper, ginger, white onion, olive oil and calamansi. place a small slice of fish on aluminum foil. scoop and spread some of the mixture over it. fold, roll and/or pinch the foil to seal it. put them all in the steamer. later as they were eating, i told nanay (mother) to just season it with patis (fish sauce) if it turned out bland. "no, it's good. i liked it," she said. when it was my turn to eat, yeah, the taste was okay. and i liked the crunchiness of the white onion. however, the fish was slightly pinkish. oops! that's the other part i "guessed" at. i assumed fish fillet cooked quickly. i was also worried about the water running out and burning the steamer. later, when i searched online, i noticed that most steamed cream dory (pangasius) recipes say to steam it from 10 to 15 minutes. do you prefer steamed or breaded and fried fish? do you make a dip or sauce for it?

I like steamed salmon, but I do not like steamed pangasius. I usually coat the fillets with flour and cook in a pan with butter. I like small catfish breaded.

that's what we did before. we coated it in flour, salt and pepper.

@LadyDuck oh, wait. i remember now. i also mixed in bread crumbs because i wanted to use them up. someone bought a pack but seldom used it so it's there in shelves taking up space so i decided to do something about it.

I like steamed tilapia but I also like breaded fish fillets. I like to dip them in mayonnaise

I like cooked fish in any form! At home, I usually bake them . . . just salt, pepper, and a little oil - that's it. Or I might put it in a parchment paper "envelope" along with vegetables and spices and let it steam in the there - in the oven. Hubby likes tartar sauce - but the kids and I like plain fish.

@hereandthere It depends on the thickness of the fish . . . but in most cases about 10-15 minutes will do it (I don't get thick fish steaks . . .usually they are thin fillets of fish). I don't really time it . . . I just kinda look at it and can tell that it's done. I know I have made tartar sauce once before, but I just have a jar of it since Hubby is the only one who really eats it.

We very rarely have fish at home. Mostly we let others cook it for us if we go out for a meal.

it's easy to buy fish here, but i'm sure it's cheaper and there's more variety in the province. fish fillet is convenient since there's nothing to clean and it's boneless, but it can be bland.

@JudyEv i have a brother who became wary of them after a bone was stuck in his throat. on the other hand, our mother, who grew up in the province, said she's still crazy about fish even after experiencing it.

@hereandthere Fish is very expensive here and I'm always worried that there might be a bone in it so mostly I prefer to buy a fish meal if we go out.

I like my cream dory steamed or cooked as sour soup! I try to not use any dipping sauce anymore because it's just added sodium.

@hereandthere i cut in huge chunks and drop them when water is boiling already. Cook in high heat for 5 mins along w veggies. Done! :)

Had breaded cream dory for lunch. The thing about cream dory is that it is naturally salty so I do not overdo the seasoning and just stick with mostly lemon and ginger.

I don't like fish being simmer for steamed, I prefer them crispy? To make it healthier! I coat cream dory with cornflakes, herbs and spices and bake those bad boys. Crushed corn flakes gives the fish a fried like texture.

we only buy it once in a while in the frozen food section. we buy the usual - milkfish, tilapia, galunggong.

Well, if it's steamed theres no oil that would be even more healthy. We often eat steamed milk fish.
