I was preparing to pack our lunches

Most of the time hubby packs his own lunch, but I was going to do it, since I needed to pack for me as well. This is my Reuben casserole. There is enough here now for three lunches. I packed one for him. I had packed one for hubby and the phone call came. School is cancelled today. We must be having heavy weather move in again. I do not see much from overnight. I am up, I am dressed. I did not expect this to happen. You know me. I shall find plenty to do, both on and off line. Homemade yogurt, for sure. Muffins, perhaps or pumpkin bread. MyLot posts. Perhaps a nap. I am really surprised. We worked yesterday.

Well that's a nice treat. I wonder if they bring you in tomorrow, or just cancel it as well since its a Friday.

@GardenGerty It is getting ready to be spring break time here, and I don't think we will get cold enough for another freeze. But last month they did close the schools for a day because the ice was so bad.

I've never heard of a Reuben casserole. Is it like the sandwich ?

It has the same ingredients, but uses less bread. There is an egg batter with mustard, Thousand Island and milk that is poured over the ingredients before they are baked. I bet if you search you would find it. It is Baked Reuben Casserole.

I've heard there's supposed to be heavy ice and sleet coming your way, which will make the roads hazardous. I'm really curious about that Reuben casserole!

The ice was bad, and continued to cause problems even today. I believe if you type in Baked Reuben Casserole you will find the recipe. It has only six slices of bread, so it is good for me. Cube your rye bread put in baking dish, top with corned beef or pastrami, and swiss cheese. Add sauerkraut and dill pickles, more meat, more cheese. A mixture of eggs, mustard, thousand island, and milk is poured over all and it is baked. Oh, it has bread crumbs on top.

@spiderdust I don't know that I have ever had canned corned beef except as hash. I make a casserole with that as well, but not reuben. We had sliced corned beef because hubby had found it marked down.

I enjoy food and trying new things. I have a harder time, and so do our students, if we just have a delay. They have a difficult time covering everything in their schedlules.

@shaggin I do not even remember my last day of school in high school. I was too boy crazy, my Senior year. I practiced our graduation then went and watched my boyfriend practice his. I do not remember any half days. For my kids, I think they did do abbreviated classes or they would do certain classes the first time, and the others the next time they had half days.

@GardenGerty When I was young they would just cancel out certain periods but now for my daughter in high school they have them do shortened periods it’s like every 20 minutes they change classes. They learn little in that amount of time. She even told me the last day of school which they got out at 10am they still switched every period so they were switching classes every 10 minutes. When I was in school the last day we just sat and watched movies.

We may. A certain number of "snow days" are built in to the calendar, but we likely have surpassed it now. Last year we used none, and the district dismissed school four days early. I work, I get paid, so I am okay with it.
