Supper tonight

Hubby made Eggplant parmesan tonight. He had never made it before (neither have I).
We decided this when we shopped the other night, as we got two eggplants for 99cents.
It was very labor intensive and time consuming, but it was delicious.
With it we ate garlic bread, and a green salad.
I am full, and sleepy, but there are dishes to wash.

@JohnRoberts So what is in your chicken chili. Around here I have heard of white bean chicken chili and it has, instead of tomatoes, a green chili sauce. No tomatoes at all.

The last time I had this delicious dish, my daughter prepared it for us. I was happy to have her fix it. We used eggplant that we had grown in our garden. Not sure I would grow it again or use it. Too much work involved in the prep.

That is what he discovered but he says he would do it again. I would be interested in slicing it lengthwise and using it in place of lasagna noodles.

It is a lot of work. I wonder if there is a frozen version. The instructions seemed simple enough, though.
