What's For Dinner

I've seen a couple people ask what people are having for their final meal of the day. This morning I promised I would let you know how my tuna casserole turned out. One word - Fantastic! It was the best tuna casserole I've ever eaten. Far superior to any pasta dish. So, how did I make it? I took about three teaspoons of clarified butter and melted it in the pan, added a heaping 1/4 cup almond flour, stirred until well blended. Added 1 cup cashew milk. To this I added 2 cans of albacore tuna in water, and a lot of baby bella sliced mushrooms - I didn't measure, I just put in a good amount and let it cook. Previous to making the white sauce, I baked the spaghetti squash in the oven for 45 minutes, let it sit until I could cut it in half with a cutlery knife, put it in the microwave for 10 minutes. As soon as I could fork the squash out of the skin, I put it into a casserole dish, added the white sauce, spiced with Mrs. Dash lemon pepper, stirred it into the spaghetti squash and put it in the oven for 15 minutes. The result is seen in the pictures. The plate is the second and final helping. I ate everything in the casserole dish. It might seem like I made a pig of myself eating all that, but I couldn't help it. It was that good, and I was hungry. I had been waiting all day to eat that casserole. I'll be making it again, many times. It's absolutely delicious! Collage made by me.

@just4him We were in Italy today to see the Notary. I had a coffee early this morning before leaving and nothing else, I think I will be pretty hungry this evening.

Yes, I did. That casserole dish was empty and I did it in two large helpings. I hadn't eaten since breakfast so I was hungry.

It looks delicious! I just ate a tuna fish sandwich for lunch. Last night my husband made ribeye steaks, baked potatoes, and peas for dinner.

Your dinner sounds good, minus the peas. Never been a fan of those little green balls. It was delicious. I'll be making it again.

It sounds good. I have a recipe for spaghetti squash carbonara I really want to make. Is almond flour expensive? Where do you buy yours? Our local places carry coconut flour which I have used and liked, not sure about almond.

It does look good. I just may try it sometime. Ironically enough, we had tuna salad as our main meal today. It was also delicious. It had romaine lettuce, kale, red bell pepper, Persian cucumbers, white beans, albacore tuna, sliced almonds, and Italian dressing.

My son loves tuna , and he loves spaghetti - so I might try something similar for him next time he visits. Of course, I won't have all the ingredients mentioned in your post.
