Eggs - how do you like yours?

I love eggs, they are one of my favourite meals when I'm in a hurry and they are so versatile. I like mine sunny side up although my granddaughter likes them hard or scrambled. You can fry them, poach them, hard boil them, they can be cooked in many different ways.
My sister recently showed me an unusual way of cooking them. Crack two eggs into a cup with a splash of milk, add cheese, ham or anything else you fancy and cook in the microwave for one to two minutes. It comes out like an omlette but make sure you cover it as it may explode!

I don't mind them. I used to give my son one in his lunchbox every day when he was at school .. until I learned he played football with it on the way!

Mm .. I've never tried shrimp omlettes. Sounds delicious. I'm getting lots of new ideas from this discussion

Pic looks so nice. Boiled eggs are good to my taste. I prefer to eat egg in that way.

I like my eggs over easy, sunny side up, omelettes, scrambled, deviled, hard boiled, and poached. Did I leave any out? Can you tell I like eggs. But like you said they are so versatile. I like to dunk toast in the yolks or put poached ones on toast. I haven't cooked an omelette in a cup yet but I have seen in done. I like to make a big batch of eggs for omelettes and then put them in a muffin tin and bake them. Little omelette muffins. Put them in the fridge and then pop them in the microwave in the morning to have an instant breakfast. You can put anything you want in them. Veggies and meat of all kinds. I like to put kale or spinach, ham, mushrooms or whatever else I have on hand. Put some cheese in there too. Yummy!!

@morgoodieWow that all sounds amazing. You reminded me of the time my sister worked as a nanny for some posh people. One day she made the children boiled egg with 'soldiers' which is what we call toast cut into strips to dunk in their eggs. One of the parents saw what she had given them and was horrified as she thought it was common and disgusting! I wonder how those kids grew up .. I used to love dunking soldiers as a child.

@sprite1950 Oh wow. I guess I will be common then because I love dunking my toast in my egg yolk. People can be funny when they have lots of money. Take their money away and what do you have? Us!!!

@sprite1950 when i cook rice in a rice cooker, i put the egg after boiling just before the water subsides and i got a perfect boiled egg.

@silvermist No I was really naughty and ate some chocolate so didn't feel hungry but I had them hard boiled with salad later on. I don't mind what colour they are.

Any way, really: poached, fried or boiled (soft yolk in each case), scrambled or in an omelette. Hard boiled in salads, Scotch eggs occasionally and I like those pork pies and ham slices that have sliced egg in. I sometimes cook us something called 'crashed eggs' after discovering the recipe a couple of years ago.

@sprite1950 It's quite filling but I may add a packet of potato rosti next time to make it even more so. It was in a paper as an extract from a book of recipes involving 5 ingredients. Lots of recipes online under 'crashed eggs' or 'huevos rotos'. I use the John Whaite one.

Mmm, eggs! I like hard boiled eggs, scrambled till a bit over done or easy over. I love green onions in my scrambled eggs. Now I'm going to boil some tomorrow to have with my salami slices.

i like mine boiled with a bit of salt and pepper sprinkled on them. sometimes i like adding a bit of mayonnaise and making a sandwich
