Eating light tonight

I made a big breakfast of scrambled eggs with veggies for breakfast.
Hubby made us cold sandwiches for lunch and we had dessert--the angel food cake with fruit and whipped cream again.
We ate lunch so late that we were not very hungry tonight. I had made a cucumber spread this morning, one of the recipes from the herbal class, and I also had some hummus on hand. We had those things with chips for me, crackers for hubby. Each of us had a cheese stick and a beef stick. It was basically a snacking evening. Again, it was late.
We drank V8 tomato juice with our meal and it tasted good.
To make the cucumber spread you peel your cucumber, seed it if necessary. Put it in a food processor and grind it up, then strain it through cheese cloth. Also food process half an onion.
Once the excess liquid has drained off the cuke and the onion, combine an 8 oz brick of cream cheese, the cucumber, and onion in the food processor. Add a little salt and pepper and 1 T. lemon thyme, or herbs of your choice. Throw in a dash of hot sauce or two. Combine thoroughly and put in a covered container. Let set at least 8 hours before trying it. Spread on crackers, chips or veggies. Very refreshing summer food.

That sounds good. I could have used plain yogurt and made tzaziki. . . now that I know to put the cukes through a strainer. Cool and fresh foods.

I have made tzatziki in the past, it is probably healthier. I never strained my cucumbers before, but I will next time.

@GardenGerty You said it right, my friend. I prefer to have cold food in times of hot weather. I do it when visiting the countryside.

We do that sometimes eating so late that dinner is just not a thing. We have what I like to call a popcorn night when that happens haha

I wish I had put more thyme in it, but there will be more times this summer. I like to have a light meal in the evening.

I find that I prefer things like salads in the summer and light meals. I tell my husband he has to eat anyway.

Sounds yummy! I too had a big breakfast of bacon, eggs, pancakes and tatter tots. I like to drink lots of water so not hungry for dinner, that I'll skip this evening.

That sounds like the breakfast I had on Friday. I have to eat something in the evening to go with my diabetic medicines. I am glad to eat light though.
