Chicken Cobb Salad For Dinner

I can't wait for dinner tonight. We will be having a Chicken Cobb Salad. They are so delicious. This morning the hubby and I were trying to decide what to take out of the freezer for dinner tonight. We knew it would be a hot evening so we really didn't want to have to do much cooking. After some discussion I decided to take out a couple of boneless, skinless chicken breasts and go ahead and cook them before the day got any warmer. I smeared some Sonny's sweet bbq sauce on them and stuck them in the oven to bake. Looked into the fridge and started pulling out what I could use to make a Cobb Salad of sorts. I quickly put some eggs on to boil and started chopping up veggies like, gape tomatoes, green peppers, a cucumber, and a couple of thin slices of ham we had left from lunch. I figured I would cut up some avocado just before we sat down to eat. A big old glass of Iced tea would complete the dinner. I can't wait. So, how has your day going? You can't each just bacon for dinner. You'd have to eat a couple of pounds of it to even start feeling full.

I made a guacamole for dinner, I made fresh tortillas to serve with it and after the guacamole I served a fruit salad. We were not hungry.

@LadyDuck I try to eat a lighter meal in the evening My hubby like his heavy meal in the evening. I will get him around to my thinking eventually.

Wow! Great to know that you have prepared Chicken Cobb salad for Dinner! Is this the actual picture or taken from net? What ever it may be its mouth watering! I am going to have some Chicken biryani and Indian bread with Butter chicken which we got it from a local restaurant!

Today is going much better than yesterday. Couldn't be here with all the errors I kept getting. My dinner will be fish. It's not as hot today as it's been, but that's due to the nice breeze we're getting today. The temps are still warm.

@HazySue It was good, but I think I'm going to skip flounder from now on. It's good, but it just doesn't hit the palate like perch or cod does.

We like to have a large salad, for dinner about once a week. I especially love adding black beans, through the salad greens. Enjoy! :)

I love my salads. There are so many ways you can make them. Adding black beans makes them heartier and more filling, not to mention delicious.
