Zucchini Cooking Fails

Any of you zucchini fans? I used to love ot fry it with seasoning all the time. I did it a little bit too much and got sick of the flavor. My dads garden sprouted 4 giant zucchinis which he gave to me, so I attempted a few recipes which did not turn out great. First, I attempted a whole wheat zucchini-banana-blueberry muffin. The recipe called for only 25 minutes in the oven, and after an hour and 10 mins, the outsides were burnt and the insides were still gooey. Gross! I later learned you have to somehow drain the water out of the shredded zucchinj (espexially with larger ones). Lesson learned I guess. I found another baking recipe, invoving some italian breadcrumbs, olive oil and pepper, followed the recipe to a tee, and now have a giant container full of mushy breaded zucchinis. At least I tried. But I think I will pass next time someone offers me zucchini. Do you ever cook this? What di you make?

I love zucchini and usually grill it or sautee in a little olive oil and some seasoning.

Yes, you tried! We learn as we practice. I eat zucchinis on a regular basis as they are very nutritious but the small ones that you buy in most grocery stores. I eat them the same way people eat cucumbers, as they come.

I just cut the crown off, cut the zucchini in half and then put olive oil and lawry's seasoning salt on it. Maybe some parmesean and put it under the broiler. My aunt used to make zucchini brownies. I'm thinking she just got a box of brownie mix and then shredded the zucchini, put it in a paper towel or cheese cloth and drained it, then mixed it in.

I am Italian and I never heard of "breaded zucchini", they are too wet to be breaded. Zucchini fritters are good. I cut big zucchini in half, take out the inside, feel with a mix of minced meat, herbs, bread crumbs, garlic and place 30 minutes in the oven, this is pretty good.
