My zucchini recipe for @MALUSE

My friend @MALUSE wants to learn about my zucchini pickle.
I have made this for a long time as it is greatly favored by my friends. I use it as appetizers mainly, over oven crisp bread or crackers.
I have some friends that are so fond of it the I make a jar of it for their birthday.
Last week, I gave it a new twist in a potato salad and it was so good that I decided the patent it, so to say
I always dice some dill cucumber pickles for my potato salad, but last week I did not have any.
I always have some of my zucchini pickles around, so I put some of it instead. It was delicious!
For the recipe you will need zucchini cut in small dices, onions (same volume as zucchini) , garlic (2 cloves), oil (half sunflower and half olive), white vinegar, dry oregano and either fresh parsley, cilantro leaves or dill.
I cook in enough oil the zucchini, take it out of the pan and caramelise there the onion with the crushed garlic. I then mix them together, add salt to taste, pepper (optional) and vinenar. I parboil everything with a lid on, add dry oregano and let it cool. When cold I add either minced parsley,cilandro leaves or a bit of dill.
I place it in jars and fill the jar with olive oil leaving no air.
It will keep for weeks in the refrigerator.

If you use vinegar, they can be kept longer.

@LadyDuck I know what you mean. My zucchini pickle disappears when Humberto or Lili visit me. I know that Lili´s present for her birthday is a big jar of them. She does not take it out for the visitors; she eats it alone with her husband

I made an easy potato salad (I boil them and peel and pare them later, then I add some oil so that they don´t absorb too much mayo). The pickles are added at last.
