Egg Salad Sandwiches-It has been so long.

Do you ever get a hankering for something? I wanted to send out for pizza last night but there was a better plan
The mighty egg saved the evening. I made the eggs in the famous instant pot and chopped some onions and mayo into them. I had rye bread. The sandwiches were so good.
I won't want egg sandwiches again anytime soon but when the mood strikes, I will. Do you ever change your mind about what to eat at the last minute?

I have changed my mind about what I wanted to eat.
I've also had a"hankering"for a certain food before.

@akalinus I'm sure it probably has a lot to do with deficiencies. I've known people to crave a food they are deficient in.
My mom used to crave chicken livers (Yuck! By The Way) and she found out she was deficient in.. I think iron? Which Chicken Livers have a lot of.

Living alone, I often do not know what I will eat when I reach the door of the fridge, so I have not to change my mind. It is only when I receive friends and does some real cooking that I think at a menu, I do not like to lose time to cook when I am alone, so the dinner needs to be ready in less than half an hour.

Oh yeah! I can think of making something, open the fridge and see something else, usually easy to cook.

I can't imagine using an instant pot for eggs for an egg salad sandwich. But then I also do not own one. I usually just boil my eggs hard for about 15 minutes or so, peel, slice and dice and whatever else and make the sandwich salad.
They ARE good sandwiches, although I have not had one in years.

I did cook some in an instant pot before. I tried with the microwave. I figured I could put the eggs in a bowl of water and they would be okay in the nuker. Soon, it sounded like bombs going off. . I heard the first one and ran but it was too late. There was egg yuck all over the inside
When my loan comes through, I might buy a dozen eggs and make sandwiches.

I change my mind a lot for things to eat. My husband does all the cooking since he retired before me. I wish he did it when I worked, but that is past. I can eat tuna or egg salad any time. I do not like many meats but I can live on either tuna, egg salad or peanut butter and jelly. When I was in high school I use to have some friends over for lunch before we went to school and I would make egg salad and tuna and put food coloring in the egg salad. My friends loved it. We were very weird.

@akalinus Absolutely. At one point when in high school my father had a friend in the opposite side of town. He also had a daughter my age. I never met her in school as the school was so large. I finally did meet her and tried to be friends with her but she was the very serious type that was always on the honor roll and just liked studying. That friendship did not go anywhere.

@akalinus It is weird how I have so many friends from my youth and even though we do not see each other much, if we called each other we would immediately continue talking and fooling around like it was yesterday. Good friends are a true jewel. Luckily I have a lot of them. Some people do not have any good and true friends and I have so many and both sexes.

Yummy egg salad sandwiches. I like some chips and my Bai drink with my egg salad sandwiches. Whether breakfast, lunch or dinner egg salad sandwiches are great! Your sandwich sounds terrific!
