Nothing To Waste

Let the leftovers begin. So, since for whatever reason no one in our family likes to deal with making homemade broth/stock, I usually get to take home the turkey carcass, and this year was no different. They tend to leave a lot of meat on it as well, which is a plus. And believe me when I tell you I strip the bones clean as a whistle. So, right now I have a pot simmering, getting all the bits of meat and goodness from the turkey carcass, and of course added some additional ingredients to add to the flavor like onions and peppers, carrots, celery and what have you. The only shame is the only thing I keep is the meat and the broth, but pretty much throw away all of the vegetable ingredients. Tomorrow I will make a soup out of it.

I know of many who make soup but not a huge fan. It is probably healthy. Enjoy!

I used to not be a huge fan of soups until I made sure that the soups I make are very hearty soups. Then they are both delicious and filling. I make a variety of soups during the winter and they are just delicious.

@CarolDM Prepared right, it's as good as chicken noodle soup.

Oh man. I LOVE soup. But I used to not be a huge fan. They just weren't hearty enough for me and so not very filling. The way I make all my soups they are loaded with lots of meat and veggies to they always satisfy.

@aureliah I like to think so. I don't know that I would ever have a future as a chef though.

It was. It turned out very good. I always like to make my broths the day before the soup since it helps to marinate the flavors, and even when it comes to soup you know what they say. It's always better the second day and fantastic the third day. We wound having to freeze some I made so much of it.

When the bones are clean I give them a quick roast in a very hot oven the boil them for bone broth. I would consider pureeing those veggies to add as a thickener to soups.

Not a bad idea on the pureeing the vegetables. Had not thought about that, but it would certainly waste less.

When I make the broth the veggies are just for flavor. I might cook the broth for a couple of hours on very low heat. They just become way too soggy.

Sounds terrific! When I make soup with veggies and throw them out, I add fresh new veggies and let them simmer in the soup until done.

Oh yes. This is definitely the plan. The veggies in the broth making process are just for flavor and the veggies in the soup are for gobbling.

I did this for the extra broth I needed for the dressing and gravy, then the dogs got what was left of the bones and they were still happy.

That sounds delicious! I am planning to make tortilla soup with a whole chicken that I got for less than $4 a couple of months ago (and froze) later in the week. I had all of the ingredients necessary except for fresh cilantro and avocado so I picked them up over the weekend. Looking forward to it!
