There is not a pie in the oven

The house smells lovely and delicious. I am trying a new recipe. It is called "pumpkin pie squares" . Basically, instead of a regular crust, one makes a "crumble" type crust of flour, butter, brown sugar and oats (uncooked). Pat the crust in a 9x13 and bake it. It smells and looks a lot like a shortbread. On top of that pour a pumpkin pie filling. MIne was four eggs, two cans pumpkin, two cans of evaporated (not sweetened) milk. Plus spices and sugar. That part is baking. There is a topping that goes on before it is done. Topping has sugar and pecans and you sprinkle it over the top and bake a little more. I am making this to take to my brother's house for Christmas.

Oats were part of the crust. 2 Cups flour, 1/2 C oats, 1/2 C butter, 1/2 brown sugar. Cut together, then pat into the bottom of the pan.

@rebelann There is a lot of sugar in the whole thing, but pumpkin pie is pretty healthy. I am tempted to make just the crust, put it in a smaller pan and cut it like cookie bars.

It is very much the same as a pumpkin pie but much less crust and work at making the crust. We liked it.
