Earlier I talked about making seas shell salad which is actually macaroni salad using sea shell pasta. We don't put tuna or peas in ours. The green you see in it is either green peppers or celery or both. Often well I use a cucumber and not the celery but I had some celery left and used that instead along with onion, green pepper, the pasta and hard-boiled eggs. We save some whether for the top and then sprinkle paprika over it all, lightly.
I cooked a few extra eggs because I was going to make two pounds of noodles but stayed with one and forgot to use less eggs.
I also tried something new. I've heard that if boiling newer eggs to bring them to a slower boil and that helps the shell come off easier.
By golly that did work. Only one peeled hard.
I'm ready for a nap but have to take what I made to church within the hour so I'm trying to wake up instead. Maybe I can turn my music up low without waking the napper in the other room.

Can you eat this salad while on your diet?

@MarshaMusselman No. No pasta allowed. I would need to use spaghetti squash for it.

@just4him I just can't see using spaghetti squash with mayo and the other ingredients. There are probably better, healthier choices out there if you want something different for your palate. Maybe the antipasto type of pasta salad would work with the spaghetti squash?

Ohh that looks quite yummy but I think my macaroni salad looks yummier hehe. Do you put cheese in yours? I used to never be able to get the shells to peel off nice until I started adding a tablespoon of vinegar to the boiled water. Works perfectly!

@MarshaMusselman nope I have never noticed a taste difference from boiling them with a tiny bit of vinegar.

@shaggin Well, if I find that the new way does't work for me because I burn them forgetting they are even cooking, then I will consider adding the vinegar. White vinegar I presume? Usually, when we are in the habit of boiling eggs we will not use one dozen and save those for boiling. After two weeks in the fridge they will also come off the shells easily.
I cooked six to eight eggs other than what I used in the macaroni salad and that was the first I've had boiled eggs in my fridge in probably six to eight months.

No, we don't put cheese in ours. Does the vinegar flavor the eggs at all? That would be the only possible problem.
It worked fine doing a slow boil although my second time doing it that way I forgot they were on the stove and it probably cooked a lot longer than needed. But, I tried one just to be sure it was okay and it was. Normally, when we know we'll be boiling eggs for something we'll get enough two weeks early and save those. Then we can boil them faster and the age helps them to peel fine.

Macaroni salad always looks amazing, I was very happy to finally try some because it didn't have any eggs in it.

We like it with eggs, but you can leave out the eggs and onions and add other things too instead if that's your preference.

@DesirousDreamer I figured as much. I don't know too many people other than maybe kids that don't like eating eggs.
