Dinnertime -- chicken enchiladas

No Sunday roast for us today, we're having a very inauthentic dish of creamy chicken enchiladas! (Actually, Wikipedia tells me that these are known as enchiladas suizas, or "Swiss style", since immigrants to Mexico from Switzerland created the dish... so maybe they're authentic after all.) A lot of recipes that you'll find online call for using canned cream of chicken soup as the sauce base, but I didn't want to do that. Instead, I made a white sauce that I seasoned with some cumin and a bit of black pepper. I made two pans, one with cheddar cheese and one with pepper jack. I also put some spinach in the chicken mixture with the pepper jack enchiladas. It's going on the table right now, with salad and refried beans and tomato rice on the side. Time for me to eat! @spiderdust I've never heard of zoodles. I found them in the freezer section. They are made with spinach and lentils.

@just4him Ah! I know which ones you mean. "Zoodles" are zucchini that has been cut into noodle like strips, like julienned zucchini. Some people use a spiral cutter to make them, or you can use a vegetable peeler.

Ooh, that looks yummy. I kept the chicken trend, I had a leftover chicken quesadilla from lunch at Chuy's, along with some cheddar broccoli soup.

I had some broccoli cheese soup a few days ago and remembered how much I like it (at least when the broccoli isn't overcooked).

Ooh this really looks god, I am sure that this is something I would love. I know that the Swiss immigrants to Mexico established dairies to produce cream and cheese. Very Swiss.

@spiderdust I like a lot béchamel sauce, but I think that a roux is also very good.

Apparently the Swiss style usually has a béchamel sauce, and I don't think mine qualified as such. I made a roux that I thinned with chicken stock, then took it off of the heat and stirred in sour cream.

This sounds like a wonderful, Sunday's dinner:) We were in the city, so ended up getting rib cutlets at Applebee's. I'd much rather have eaten your delicious meal, any day of the week!

They were very good! The pepper jack cheese, despite containing both jalapeño and habanero peppers, wasn't terribly spicy. I was also worried that the spinach would make it more watery, and it did not.

i love me some 'f these 'n like yerself, i make my own sauce. gotta make my own tortillas (gluten free, danged celiac disease...), so don't make 'em oft.

I can't remember what I had actually last Sunday now that I think about it, but your dish looks and sounds very good. I like the twist on the enchiladas.
