The Horse Goes Wild!

Even though it's Winter here, I still like to have salads now and then. In my last salad post, I presented a pretty picture of Romaine and tomatoes (and maybe one or two other ingredients) delicately coated with blue cheese dressing. I was trying to make it appear like a Caesar salad. But my default salad is gnarlier than that! I use lettuce, my beans of choice, canned tuna, mandarin oranges, hearts of palm, and whatever else I have lying around, and then SMOTHER it in Marie's Blue Cheese Dressing. This was my lunch a couple of days ago. What's on your menu for today?

It does sound counter-intuitive but you should eat more salads in winter. Although it's tempting to go for the hearty comfort foods you need the nutrients in salads far more in winter than you do in summer. Just had some homemade spicy tomato and vegetable soup with some crusty bread. Nice!!

That sounds good! But today, I have a taste for Indian food. And not of the Trader Joe's variety. I'm heading out.

I had a Pancake of Indian Semolina(Suji in Hindi) with coconut chutney. It was healthy as well as delicious and not too much oily too.

Sounds good. I wonder if I've had coconut chutney. Hmm. I ate light yesterday. Maybe I should go to my favorite Indian place for lunch today.

For lunch (or dinner as we call it here), I cooked a fresh ham, mashed potatoes and gravy, corn, and biscuits. We like our biggest meal around 1 or 2pm, then something lighter in the evening. I love a good salad and my favorite dressing is Blue Cheese. I'll have to try Marie's.

@TheHorse It's just country fare, but pretty good. Haven't tried much Indian food, so not sure if I'd like it. I think I'll cook a beef roast tomorrow with some cabbage and some kind of potatoes, also maybe fry some corn bread. Just took a pan of brownies out of the oven to cool. Trying really hard to resist eating half the pan. The brownies, not the pan.

Marie's is really good. Not too sweet. If I weren't heading out for Indian food, I'd stop by for some ham and mashed potatoes.

If I'm going to eat dinner today, I need to get the spaghetti squash in the oven to bake. My plan is tuna casserole.

@TheHorse Not on the side, mixed into it. This is one I made a while back. It has mushrooms in it, but the one I make today won't.

You wild thing you ! I never thought of salad as a seasonal food - we pretty much eat it whenever we feel like it (but of course we can buy almost anything all year round here). I love a good gnarly salad that's tasty and filling. Today I had shrimp alfredo from last night's dinner eating out . . . I should've had a salad with it.

The roast is in. I havent felt like messing with the rutabaga so I might just add green beans and maybe a side of fried mushrooms.

We eat a lot of salad in our house, my daughter is not a picky eater but like a lot of kids, she is wary of vegetables haha but she loves salad. We like to add some chopped tomatoes and sliced mushrooms to ours

We have tomatoes and cucumbers with Ranch or Russian dressing. Your picture looks like the glorified rice my grams used to make.

Rice? Interesting. There was no rice in my salad. But I had just the right amount of rice with my Indian food today. And one piece of naan.

I love a good salad. You might think I'm completely crazy but I actually get a sort of high from a really good plate of fresh leaves and fruit with a vinaigrette dressing! My partner's not crazy about salads, he prefers his vegetables roasted, but this week he's away with work so I'm indulging myself!
