Potato Candy! Please!

Some of you may remember my discussion of a few months ago. It was a treat that I made for Christmas. I had suggested that I might make some potato candy for the following day (Christmas Day) and my cousin jumped at that and all but made me promise her I'd make it. Well fast forward a few months and she's been nagging at me to make it again. This is usually a Christmas time treat but I will be making some either today or tomorrow for her. Now it's off to the grocery store to pick up some of the necessities. For this candy, I only need a potato, I believe I might have enough of the other ingredients that are required. What are your Wednesday plans?

Is it the one made with mashed potatoes, sugar and peanut butter? Not something I can eat.

Yes. Though let me clarify, when I hear "mashed potatoes" I think of butter and milk being added. This is just a potato that is mashed up and sugar added to it to facilitate a dough. Why can't you eat it? Sugar?

@ScribbledAdNauseum Exactly what I intended and what it is for us a "mashed potato" a potato that is mashed with a fork. I am seriously allergic to peanuts.

It's the beginning of the Lenten Season for us Catholics. This is a fasting and abstinence day so I refrained from eating meat and much. I only indulge in a full meal at dinner time with rice and fish.

@Debscrochet Fairly easy. Just slightly time consuming. I can tell you how I make it, if you'd like. There are recipes online that slightly differ from the way I was taught.

My Wednesday plans where not fun. We went up taking our 8 year old to the doctor and getting her medicin. Now today I have a sick 4 year old. I think it’s a cold but he could be getting strep like his sister. The little butt head didn’t head my wanting of not drink his sister’s drink.

Aw, I'm sorry your babies are sick. I hope that they start to feel better soon. My cousins give their children a teaspoon of elderberry syrup a day. They still get sick sometimes but it keeps sickness at bay.

@ScribbledAdNauseum it doesn’t help for infections. Strep is all bacteria based so there is much to do to avoid other then wash wash wash. The littlest might have it too he has throw up a good few times but virus are like bacteria it just had to run it’s course.

@ShyBear88 Oh yikes! Sorry they have strep. I'vee had that maybe once or twice in my life. I am glad as I am such a baby with a normal throat ache. Hope they get better soon and it doesn't spread to the rest of the house.

It's not really a cookie. It's a confectionary type treat. You use 1 lb confectioner's sugar, one small potato that is boiled and mashed, you add to this the confectioner's sugar and one stick of butter (3/4 cup) and combine this. Then roll it out and slather peanut butter on it.

We made that a few times when I was a kid. It's a good way to deal with leftover potatoes but it doesn't take much.

We've never made it with left over potatoes, atleast not to my knowledge. This was always made around Christmas. My grandmother would make it the night before, the same time she made the pies.

One batch of this is 24 pieces. I am going to only make the batch and give my cousin 12 pieces and keep 12 pieces for myself. She has been nagging me about it, good-naturedly of course. I am not sure why she hasn't asked her brother, who also has the recipe for this. It's a family tradition.
