Mochiko Chicken

Okay... I cooked my second recipe for my cooking blog.
This one came from the JagNet Jaguars Women's Network 2003 Cookbook. It is basically a cookbook mostly made up of the wifes of the Jacksonville Jaguars. There are a few recipes in there that some of the players contributed, and some from the administration staff.
Since this cookbook was created to help a children's home for abused, orphaned, neglected, and abandoned children...this cookbook is considered a limited addition, and unfortunately...is not in print anymore. But of course...all proceeds went to a very good cause.
If you live in the Jacksonville area, you might be able to find a good copy at a thrift store (which is what I did)... I also did a little research, and found a few copies on Amazon, for those who are interested in attaining a copy. I did not find any on eBay...but that does not mean a copy won't pop up somewhere, in the near future.
If you are not able to attain a copy...please feel free to email me for the recipe.
I chose this recipe for the simplicity...and ease in finding the ingredients. Plus... It just sounded so delicious!
In addition to the chicken, there are 9 other ingredients...all (as mentioned) which can easily be bought at your local grocery store; with the exception of one ingredient...mochiko flour.
Since this is an Asian ingredient...unless your supermarket has a large Asian section...you will more than likely, will have to go on the hunt for an Asian market to purchase it. I was fortunate enough to have one less than 5 minutes from where I live. It only cost me $2.13 for a small box, which made it easily affordable.
This recipe does call for marinating all the ingredients for at least 5 hours. I went ahead and did it overnight...so the flavors could infuse the chicken, even more.
The recipe calls for 2 pounds of chicken. If you are single like me, you can cut all the ingredients to about half...and it will still leave plenty to cover 1 pound of chicken. And if you have a large family, then you just double the chicken, and ingredients...using the same process.
Once it is ready, you just add the chicken to a little oil in your frying pan, and cook until lightly golden brown, or a little darker, if you prefer. It really is an easy recipe.
The chicken came out really tasty. I had never had it before, so it was a nice treat to have my chicken cooked in a different way, with these flavor combinations.
I added yellow rice, and corn as side dishes...and ended up with a delightful meal.
Until next time... Happy cooking!

You did not read my previous posts. Of course there are way more recipes. But I decided to choose one from every cookbook I had, just to give folks an idea of what to cookbook is like. Then when I get through them all, I will start over, and cook more. I think sharing cooking tips is fun.

Yeah... But we are not allowed to post recipes on this site. The best I can do is talk about something I cooked, and if someone is interested, they can email me for the recipe.
