My solitary Easter Dinner

Even though no family member can join me for the Easter feast, I still roasted a pork. Yes, I was by myself, I worked in the morning, hubby worked the night shift and the grown up kids who don’t live with us anymore we’re unavailable. It didn’t stop me from celebrating the Resurrection Day. I proceeded to celebrate with food, visit the church and had a quiet evening of reflection on the life of our Lord. How did you celebrate yours?

We do not eat pork, this year I refused to buy the traditional lamb, I do not want to eat those cute baby lambs anymore. I served smoked salmon.

I prefer fresh salmon to smoked, but like smoked salmon on salads

Four us we had roast lamb this is our tradition. We do not eat pork. I hope you enjoyed it.
