Today's Dinner - A Great Big Salad

Today I am in the mood for one of my "kitchen sink salads". That is a salad that you throw everything into it that you can find to use. My sister-in-law will be here for dinner and she loves these salads. It looks like I will be putting in lettuce, cherry tomatoes, green pepper slices, tortilla strips, shredded Mexican blend cheese, some black olives, touch of cabbage, a few radishes sliced, cucumber, some carrot shredded, strawberries, a handful of walnuts, and chopped up chicken. I am waiting for the chicken to finish cooking. I used some herb marinade on boneless skinless chicken breasts and am baking them in the oven. They should be great chopped up in the salad when they get cools. DO you see why we call it our "kitchen sink salad"? We throw all kinds of things in it.

Yes, I surely understand the name. Your salad sounds good, I would skip a few things that I do not like (tortilla strips and cabbage), but the rest is fine.

I do add a bit of onion to some salads but not this one. We usually eat around 5, come on down.

That's one of the great things about a kitchen sink salad. I also make kitchen sink stir fries. I hate having to throw out food.

i'm a gigglin' coz i jest call such a salad. the hubs's purty much an iceberg lettuce 'n lil else kinda fella. 'twas horrified the 1st time he saw me put fruit'n a salad. great way to use'p lil bits that'd otherwise wind'p ruinin'.

@HazySue mine ate no veggies outside 'f green beans 'n corn when i met 'im, lol. now he eats veggies, e'en salads - 's long 's there's no 'weird' lettuce (aka: he'll only eat iceberg 'n i like a variety), he's always'n the lookout'n spring fer dandelion leaves,

It is a great way to use up food that might otherwise end up in the garbage. My hubby used to be a typical lettuce, tomato, and cucumber type of salad guy. Now he eats these salads up and asks for more.

I love making salads like that! That's why I've always been fond of places that offer salad bars, because I will literally pile as much as I physically can onto my plate. I love creating (and eating) these types of salads.

They sell tortilla strips in the salad department so one day oi thought I would buy them and try them out. They were good.
