Avocado Toast for Lunch, Yum, Yum

I just had some delicious avocado toast for lunch. Take one ripe avocado, add a bit of lemon or lime juice, a sprinkle of salt, add a piece of toast and there you have it..I should have kept it at one piece since avocados are pretty fattening, but it was so good, I had to have a second piece.(I did only use one avocado though).well at least it's good for you..

I only buy them if they are on sale. They have gotten so expensive. This last one I bought was not ripe when I bought it as well. I had to wait a few days for it to ripen.

@LadyDuck Sometimes they are cheaper if you buy a 4 pack of them. 80 cents is a good price for them. They can be as much as a 1.40 for one. The one I had yesterday I got for .79.

@snowy22315 As they have been declared "super food", they have become expensive. I only buy when they are on sale, they will be 80 cents each, I will buy some ripe and some not, so I can consume during several days.

Yes, it is good a lot of ways but just eating the avocado by itself, keeps the calories down.

I love avocado too, but spoiled so I love it with my sandwich or in a salad. I don't like too ripen ones though. Do you know an easy way to get the outside skin off?
