I am not poor by any means. But, that may be a product, in part, of the way I cook. I use everything. Nothing goes to waste. Well, practically nothing.
So, what's in my poor man's soup?
I parboiled some chicken leg quarters last night for cooking on the grill. I saved the "broth" or at least about 2 cups of it and put that into a jar since I knew I was making a soup tonight.
So, I put that 2 cups of "broth" into the pot. I had some leftover macaroni and cheese. I put that into the pot. I had some leftover hashbrowns. I put that into the pot.
I had some leftover roasted potatoes. I put that into the pot.
I had some leftover broccoli. That went into the pot as well as some leftover peas.
I had some leftover grilled pork steak. THAT went into the pot.
I cut up an onion and threw that into the pot. I cut up 4 stalks of celery and threw that into the pot.
I opened a can of diced tomatoes and rinsed it out with water and that went into the pot. I also opened a can of tomato soup, rinsed it out with water and threw that into the pot. As well I opened a can of cream of chicken soup and that too went into the pot.
I added a little bit of oregano and Italian seasoning, a little bit of garlic, and voila! We have a poor man's soup made with a ton of leftover stuff we had in the fridge.
Soups like this are cheaters. But they actually turn out quite good. And to boot, you save a ton of money because you make use of a bunch of stuff that is otherwise lying around.
Serving it, we will probably add a little dollop of sour cream and top it off with some shredded cheese, maybe crush a few saltines, and this soup will fill the gullet, save the budget, and be delicious!

You just got me very hungry. I cook like that too. Everything in one pot. Send over a barrel to Florida.

@scarlet_woman I have actually never made soup in a crock pot, but I have heard of several people who have and they always say it turns out quite good. I may have to give it a try one day.

So, you make it sound like anything thrown it will be tasty. I put up my hand before you were through. Why add the cream of chicken soup? Surely, it didn't make it creamier?
When you say you rinsed the contents of the cans or with water did you mean to first emptied the contents and then rinsed the cans out using the good stuff left behind?
It's name this Leftover Soup rather than poor man's. Or maybe rich man soup since they don't waste anything.

Wow. I wouldn't think that would taste good, but, sometimes you're right the most unlikely combos are wonderful. Except I wouldn't have any leftover mac n cheese lol

In layman's term, you are considered a minimalist instead of frugal..
