2019 Health Journey -- Day 162 (June 11th)

Hey everyone, hope you have had a great Tuesday! I'm back to share about my day of eating! I did stick to the low carb plan today. Fasting blood sugar: 88. That's my best fasting number in a long time!! Meal 1: Low carb enchilada using a low carb tortilla 2 teriyaki flavored sausage sticks - Didn't check blood sugar after because I left meter at home. Oops! Meal 2: Two boneless salmon fillets. (Didn't weigh them, but up to 8 oz total) - Blood sugar after was 110. Too much protein, with not much fat. Meal 3: Chicken cordon bleu casserole (1 serving) & dessert (peanut butter and butter mixture). It's a delicious "fat bomb". Blood sugar after: 105 ~Macros ~ (approx) Calories: 1,418 Protein:112 Fat: 96 Net Carbs: 19 So, my protein was a bit high today....but that is okay. My macros are supposed to be more around 70 to 75 grams of protein. I did keep the carbs low though! So how do you think I did? Also, how did YOU do? Have anything good to eat?

You did well. I ate okay, but somehow I'm gaining weight. I need to do something different. I had a great tuna salad yesterday with eggs, tomato, and onion. I knew that tomato would make it great.

@just4him I will use tomato sauce/paste but I don't like actually eating tomatoes lol

Thank you, was a good day with the food all tasting good! Sorry to hear about gaining weight....I know carbs can make you hold onto water weight...but not sure what else would cause weight gain. Tuna salad sounds good, I wouldn't put the last 2 items, but in general it sounds like a good meal!

@RubyHawk I am trying....I do fine until the days come along that I am not able to stick to my diet, or plan a cheat day.

Thank you, they weren't as good as I hoped, but better than they are on carbs! The casserole was chicken, diced ham, shredded cheese, and then a "sauce" made out of cream cheese and heavy cream. The shredded cheese I think is supposed to be swiss I think....but we use cheddar jack and it's still delicious!

@Janet357 Honey would make my sugar spike.....so I think I will pass. They say fruits are good too, but those will spike my sugar too.
