The last of the mangoes were used to make mango jam. I picked the easiest recipe I found on the Net and was pretty satisfied with the results. The photo does not do justice to the end result.
I have kept it for cooling before adding a preservative. I prefer adding that although the recipe does not say so. I will later fill it in glass bottles. Most of the fruit juices I make I add that preservative

I use a liquid preservative. My photo looks different It has a nice golden colour

That recipe is easy and simple Start with just one mango. I used quite a few and used my judgement while adding sugar

I never had mango jam but I bet it's delicious. It certainly looks good in your picture even though you say it doesn't do it justice.
