This leaf known as Pandan or biryani leaf transforms ordinary rice to taste like the exotic rice that is used for making biryani The rice that is used to make biryani is known as basmati rice which is pretty expensive. It is ok using it for home consumption but if you are having a party that involves a crowd then adding this leaf to the biryani using ordinary rice will have the same effect. Your guests will not know the difference What are you waiting for?

I did not know, I always buy Basmati rice, it is a bit expensive, but I never need to serve a crowd.

@allknowing May be those who consume a lot of rice should consider to grow those leaves. I think we buy two kilos of Basmati every year. We do not consume rice every day, not even every week.

@LadyDuck Don't you eat the rice from the north of Italy? It's perfect for risotto. Indian rice doesn't stick together in the same way. I remember how surprised I was when I first learnt that rice is grown in Italy. There are even rice fields in Sardinia. Do you know the Italian film Riso Amaro with Silvana Mangano? I don't remember the content but I know that it was very famous.

My friend had some in her pot. Now she has shifted. I have used it a few times in my regular rice to give it aroma of basmati. I will check if I get one for my garden. Good that this post reminded me.

Pandan, being a tropical plant, doesn't grow here but I believe that one can buy the leaves frozen and also as an extract. As Basmati rice is not very much more expensive here than normal (long grain) rice, I use Basmati rice almost all the time when I serve it with oriental dishes. I would tend to use long grain rice with Mexican food, such as Chilli con Carne and, of course, I use the Italian short-grained rice for a risotto and a Spanish variety for a Paella (not that I cook these very often, but I have packets of them in the house). It's interesting that the pandanus leaf contains exactly the same chemical as Basmati rice. They are two very different plants, of course.

When a leaf can provide the effect why not use it Here basmati rice compared to the ordinary white rice does pinch one's purse particularly if the quantity of biryani is large. What else tastes delicious is the kheer we make
