I did burn the bottom,
but otherwise the carrot soup was good. It was thicker than I thought it would be, but that just made it heartier. I sprinkled some Parmesan cheese on the top for a little extra flavor.
I have at least a bowl's worth left--I guess that will be tomorrow night's dinner.
I will certainly make that again when I wind up with too many carrots in the house, and maybe add something else to it -- like mushrooms or some other veggie. It was good with what was in it, though.

My mother would make carrot soup. I have not had it in years, but I remember it is very good and good for you.
