Getting ready for that fish fry!

My husband caught several Bream and Bass in our pond yesterday, so you'll never guess what we're cooking for a late lunch today. Hamburgers. Ha, gotcha! Of course it will be those fresh, delicious fish. He skinned the Bass and filleted them...they're the next best thing to catfish. I'll fix some stewed potatoes with onion and bacon, then when he's almost finished frying the fish, I'll fry some corn bread. And of course, fresh red tomatoes from the garden. I can't wait! I baked some lemon bars yesterday using a gluten free recipe and I'm sorry to say they aren't very good. Too mealy tasting. Oh, well, I'll keep trying. Are you having anything special for lunch or supper today?

yes please 'n 2nds, too! i'll give ya a hint'n those lemon bars 'n some'f the other gluten free thingies, hon. 'tis best to let the batter sit fer 't least 30 minutes (dependin' 'pon the flours used) so's they soak 'p the liquids proper 'n aint mealy. jest from my own personal 'xperience.

@1creekgirl i've not tried that, hon. mostly i tend to stick with sorghum 'n almond flour, a lil tapioca 't times. i've celiac disease, so can truly feel fer yer son'n law'n hubs 'ntolerance. took 'em o'er half my life to figure out my troubles with gluten. some 'f those batters need e'en more time to soften the flours 'n can be put'n the fridge fer e'en o'ernight. sometimes ya need to add more liquid, but such's worth the 'ffort. me, too! would'a certainly reminded me 'f home 'n my dad's fish fryin' days.

@crazyhorseladycx I'm sure sorry to hear you have Celiac. It must be hard to always have to watch out for cross contamination and such. I really do appreciate the advice about the flours and if you want to send more helpful hints, please message me. How long ago did you find out about the Celiac?

Thanks! I'll try that next time and hopefully it will help. The flour I used was Krustease gluten free 1 to 1 flour that has several grains and is supposed to be able to be substituted for regular flour. Do you have someone in your family who is gluten intolerant? Our son in law has been for many years, but we just recently discovered my husband is, too. Wish you could have had that fish dinner with us today.

@1creekgirl It's been a lot of years since I did a fish fry. Years ago @ a family reunion my great aunt prepared and fried some catfish from my great grandfather's pond (he had it on his property & raised them, just one of his many ventures over the years.) I do like fish fry's.

I had some of my friend's chili which was absolutely delicious, she puts a little maple syrup in it which is such a delightful addition.

@1creekgirl The dessert started with hot stewed apples and you topped it with cake mixture then baked for 20 minutes. I served it with custard and cream. It was yummy.

I love this approach when I go fishing. I am new in fishing, so I still choose places and everything is important to meOh by the way, and than God my family does not live from my fishing, I did not have much luck, I took only one little fish, which would be a little for even the cat
