Mexican American Dinner

United States
July 17, 2019 2:25pm CST
That's what I am calling it. I bought an Old El Paso dinner kit last week. It's a kit with flour tortillas, seasoning packet (for the meat) and salsa. I also have some corn tortillas left over from a meal and will probably use those for my own tacos. I bought Pico de Avocado from a local store, I have onions and cilantro as well. There's a salsa by Herdez that is pretty good, it's guacamole salsa and is creamy and delicious. That will be my dinner for tonight. It has been forever since I've made an old el paso kit. What's your dinner plans?

Hot dogs are for dinner tonight. Cheap and easy and the kids typically will eat it and won’t complain.

@ScribbledAdNauseum some times but typically I boil them on hot water. We have a grill but in the summer months you get eaten a live by bugs. Since it’s in the grassy

I made hot dogs at the beginning of the month. Not a big fan of them, but used to love them when I was a kid. Do you grill them?

Oh yum! I don't know why, but I can have Mexi foods all the time if I could - so good. Tonight for us will probably be a ground chicken and vegetable soup. Lots of leftover here and there vegetables - need to make use of them.

Oh, I love mexican food as well but I can't eat it too often. I always end up eating more than I think I will.

@ScribbledAdNauseum I love spicy foods, but I can't seem to handle too much of it anymore (age?). I know - I can always woof down Mexican food .

@much2say I used to order cheese dip with jalapenos in it at the restaurant. Now I order Guac. I still love cheese dip though, I just can't handle extra jalapenos anymore.

Sounds good, tacos can be delicious....I should make some soon since I have low carb tortillas. Not sure what is for dinner tonight yet.

You can add things like tomatoes, onions and cilantro to it to bulk it up and it will be even healthier.I do not usually buy a taco kit.I also don't usually use ground beef when I make tacos, so this was a throwback to my youth.

@MommyOfEli2013 I've never tried olives in a taco. No, I use shredded pork or strips of shaved beef, something like that.

@ScribbledAdNauseum I'd just add shredded cheese and sour cream to mine since I am picky and don't like those sort of things. But when my grandparents have tacos they have tomatoes, onions, lettuce, and olives as other options. I always use ground beef for mine....do you use ground turkey instead?

Meat loaf balls grilled in our ceramic grill, seasoned brown rice, and salad.

Seasoned brown rice? Was it a box or did you season it yourself? I actually prefer brown rice over regular now.

@SophiaMorros Oh I bet that is delicious. I just get the steam in bag rice, or occassionally a zatterin's type kit.

@ScribbledAdNauseum I've always preferred brown rice...and I season my own. Plus I cooked it in homemade beef stock. It was yummy...even my folks that are meh about rice said they liked it.

I had a salad tonight, some couscous, and some trail mix. Was a very busy night for my eating apparently. Lol. Hope you enjoyed your meal!

I did enjoy it, thank you. I probably could have done without the onions though, since I was the only one that ate any and there are still a lot leftover. I've tried couscous once or twice I think, but I don't regularly eat it or cook it.

We have cherry tomatoes here, I ate one or two before my dinner last night. I do not think I have ever had cod. I do not eat much fish.

I've used their salsa verde the most, but we got the avocado salsa in May for cinco de mayo and I loved it.

I bet you have the spices in your cabinet. I think it's just cumin, onion powder, and chili powder that make up the taco seasoning.
