Leftover Pork Chops for Dinner

Baked some pork chops yesterday with bread crumbs. Made them a little different than a couple of weeks ago. Added some different seasonings, parsley and bread crumbs. Also had mashed potatoes, gravy and field peas with snaps. One of my favorite dinners when I have an appetite. I let it bake for about an hour. I like them crispy. Made some Mexican cornbread (from a mix), added a little cheddar cheese. And had lots leftover. This will be my dinner again tonight. No cooking, just heat it all up on a plate and I am done. Plans at your house?

oh my! looks'n sounds delicious. bonus y'ave no need to cook 'n then've the 'mess' from such this eve. i ate a pork chop the hubs fixed yesterday, 'gainst my better judgement. i 'dore pork chops, they aint so fond 'f me. i used to season/bread/pan fry'n a cast iron skillet, then put 'em'n the oven fer a good 45 minutes. tender, flavorful juiciness! sure miss those days, lol. supper? i've been doin' liquids all day, but've thawed me some homemade chicken noodle soup. if'n the gut settles 'nough, i might try some 'f that.

@CarolDM i keep my ceilin' fan runnin' year 'round :) got'ta 've that air movement. i confess to ne'er e'en tried such prior to the celiac disease - when i found the gluten free'uns to be so awful. there's a few new brands that're not made with rice flours that're purty tasty, but purty spendy, too. more 'f a treat 's guilt lays heavy if'n i eat more'n 2, lol. i've found the hardest part bein' gettin' 'em jest the correct thickness. i think i might 'nvest'n a pasta rollin' thingy. such'd be'f great aide fer both i'm thinkin'? last'uns i made 'd sharp cheddar. i took 'em to a calf brandin' 'n the cowboys ate 'em like candy, lol.

It is very easy to make too. And you can fix whatever seeds you like of course. Good luck with the soup.

Man, I have not made breaded pork chops in ages, but I need to put this on the menu VERY soon. The day of AND leftover sounds DELICIOUS. Thanks for reminding me I really to make this dish very, very soon.

@CarolDM It always surprises me that making pork chops this way doesn't dry them out. They always come out moist and delicious.

My mom used to make the best fried pork chops. I have not been able to make the way she did. I like them crispy too.

@CarolDM She fried them after making a batter and seasoning. She used flour, salt, pepper, and other spices and I wish I asked her what all she used.

@noni1959 Sometimes all you need is salt and pepper. Every now and then I will add seasoning salt and maybe a little garlic salt and that is it.
