Eggs in a Basket for Dinner

Ever had eggs in a basket? Very easy to make. You simply butter a frying pan. Cut out a circle in a piece of bread. Crack an egg in the hole and cook it a few minutes on one side, then turn it over to finish cooking the egg until done and the bread is brown. One of my favorites for breakfast growing up. Still cook it today. It is good by itself, or with bacon, sausage, or fruit. Whatever you want to add as a side. Or you could make two like I did. Cook two pieces of bread and two eggs, and you have a meal. Also, I fry the little pieces of bread you cut out, it makes sort of a fried toast. This was dinner for the evening. I have heard it called other names too, like egg in the hole or hen in a nest. Have you had this before? If yes, any variations on cooking it?

I’ve made them for my grandkids for breakfast, but used a heart shaped cookie cutter to cut out the center. They loved it!

It certainly looks to be an easy to cook breakfast. My version is for the use of the leftover bread that I dip in the beaten egg. After frying it looks like french toast but has a different taste.

These are always delicious any time of the day. We always called them 'egg in the middle.' My grandmother used to make these for me all the time when I was a kid. I like them with the egg sunny side up. Mmmm.

I know it's yummy. In case I simply fry egg in a frying pan. Break it, pour it on the frying, put a little salt and wait for a few seconds. It's done.
