Keto Pumpkin Bread

I've found a few recipes and have the ingredients I need.
Well, except for the baking soda. I have baking powder (which the recipe requires) but not the baking soda. Will have to substitute.
I'm using coconut flour instead of regular flour, pure maple syrup instead of sugar. I'll be using a little less maple syrup than is required as well.

I like to just use recipes as a guide anyway, and not a step by step process.

May I ask this question - what is KETO? I have been reading that word but I still do not get a clear idea of what it is really all about.

Ketogenic Diet.
It's a diet with food that put your body into ketosis. I don't really understand it myself, but I think it's where your body burns off calories at a more rapid pace.

I saw coconut flour in a grocery store and wondered if it was worth the extra money. Maybe I'll have to buy it next time I am there.

Did you know they also have coconut sugar? I haven't seen that at the grocery store, but I have heard of it.

@ScribbledAdNauseum Yes. A friend gave me a bag of coconut sugar. It didn't seem to be much different than regular sugar.

Pumpkin is a big thing here in the US. People either love it or hate it, but there are all sorts of pumpkin flavored treats this time of year.

I don't like pumpkin, but sounds interesting....it's great to see someone sharing something Keto/Low carb since that is the diet I follow (well when I am sticking to my diet)

I want to do a few more keto recipes. I don't think I"ll stick to the diet, but I want to do a few recipes that are keto. I have a family member who followed the keto diet and he lost about ten lbs over about two month's time.

@MommyOfEli2013 That's really great! I really do want to do Keto because of the diabetics in the household. The thing is, we aren't sure what type they are because they don't go to the doctor. We just know they are because they were told they were prediabetic the last time they went.

@ScribbledAdNauseum Well I have a lot of recipes I could share, lol....but that is good to want to try some even if you don't plan to stick to the diet. That's great that they lost that much in only that amount of time. I would recommend Keto/Low carb for sure....went from an A1c of 9+ to 5.6 at my last check up

I like a pumpkin with spices in it. Mostly pumpkin pie. Can't eat squash or sweet potatoes. It would probably be good if I could for the food value.
